It seems like only moments ago we were decking our halls with garlands and wreaths and preparing for Christmas dinner. One of the favorite things my mom would make anytime the weather turned exceptionally cold is this one pot chicken corn chowder recipe. It’s pretty frugal but also incredibly filling and delicious! She got the recipe from a family friend and to this day it’s still one of my favorites.

Because we are relatively warm here in Southern New Mexico, I’ve been noticing the sharp outline of emerging buds on the tree in our yard for a few weeks already. They are especially gorgeous contrasting against the vibrant colors of dawn and deep blue of the night in the cascading moonlight. However, it has been bitterly cold the past few days. Which because of the flat nature of where we live are exceptionally voracious this time of year. 3 Step One Pot Chicken Corn Chowder Recipe

To start this recipe, you’re going to need some dead chicken. If you have leftover baked chicken this is a great way to reduce food waste! You can also bake some just for this occasion. Take it from someone who just learned how last fall – it will literally change your life. But if you don’t have any chicken laying around and don’t want to bake some – just buy a little bit of canned chicken. Yes it’s more expensive, but you also invest less time. It’s an opportunity cost, do what works best for your crazy world!

Step 1

You’re going to begin by sauteing chopped celery and chopped onion in (you guessed it) butter.

Step 2

Once they are soft enough to enjoy you’re going to just do one more step. You’ll just dump the rest of your ingredients in on top of the celery and onion. This includes your milk, cream of chicken, can of corn, cooked chicken, basil, salt and pepper.

Step 3

Bring this chowder mixture to a boil and simmer until everything is combined!

3 Step One Pot Chicken Corn Chowder Recipe

Ingredients

  • 3/4 c. celery (chopped)
  • 3/4 c. onions (chopped)
  • 1/4 c. butter
  • 1 3/4 c. milk
  • 2 small cans of cream of chicken
  • 1 can (or frozen bag) of corn
  • dried basil
  • salt
  • pepper
  • cooked chicken

Instructions

  1. Saute celery and onions in butter.
  2. Combine milk, cream of chicken soup, corn, basil, salt, pepper and cooked chicken with celery and onions.
  3. Bring to a boil and then simmer until chicken corn chowder soup mixture is well combined.
  4. Enjoy!
